{"id":1892,"date":"2022-10-18T18:56:17","date_gmt":"2022-10-18T16:56:17","guid":{"rendered":"https:\/\/food-impacts.com\/?p=1892"},"modified":"2025-03-27T09:20:31","modified_gmt":"2025-03-27T08:20:31","slug":"corsus-besucht-produzentinnen-von-mate-zucker-und-soja-in-paraguay","status":"publish","type":"post","link":"https:\/\/food-impacts.com\/de\/corsus-besucht-produzentinnen-von-mate-zucker-und-soja-in-paraguay\/","title":{"rendered":"corsus besucht Produzent:innen von Mate, Zucker und Soja in Paraguay"},"content":{"rendered":"<div class=\"block-wrapper block-wrapper--paragraph\"><div class=\"container container--narrow\">\n<p>Im Rahmen des&nbsp;<a href=\"https:\/\/www.corsus.de\/news\/references\/clif-climate-impacts-of-food\/\" target=\"_blank\" rel=\"noreferrer noopener\">CLIF-Projekts<\/a>&nbsp;besucht corsus aktuell Produzent:innen von Mate, Zucker und Soja in Paraguay. Zu diesen Produkten werden Fallstudien durchgef\u00fchrt, die dazu dienen, methodische Fragen bei der Entwicklung des Kommunikationstools, das im CLIF-Projekt entwickelt wird, zu kl\u00e4ren. Die drei Produkte wurden gemeinsam mit dem&nbsp;<a href=\"https:\/\/www.wwf.org.py\/\" target=\"_blank\" rel=\"noreferrer noopener\">WWF Paraguay<\/a>&nbsp;ausgew\u00e4hlt, der auch die Besuche organisiert hat, da sie typisch f\u00fcr Paraguay sind. Die Reisen f\u00fchrten&nbsp;<a href=\"https:\/\/www.corsus.de\/ueber-uns\/unser-team\/#member-956-info\" target=\"_blank\" rel=\"noreferrer noopener\">Ulrike Eberle<\/a>&nbsp;und&nbsp;<a href=\"https:\/\/www.corsus.de\/ueber-uns\/unser-team\/#member-3222-info\" target=\"_blank\" rel=\"noreferrer noopener\">Marius R\u00f6dder<\/a>&nbsp;in die Gegend von Encarnaci\u00f3n, von Ciudad del Este und nord\u00f6stlich von Asunci\u00f3n. Die Einblicke in die Produktion vor Ort waren sehr spannend.<\/p>\n<\/div><\/div>\n\n<div class=\"block-wrapper block-wrapper--paragraph\"><div class=\"container container--narrow\">\n<p>Mate, der insbesondere f\u00fcr die paraguayischen Nationalgetr\u00e4nke Matetee und Terer\u00e9 angebaut wird, wird einmal pro Jahr in den Herbst- und Wintermonaten auf der S\u00fcdhalbkugel geerntet. Nachdem die Pflanzen geschnitten wurden, erfolgt das sogenannte Zapecado, das hei\u00dft die frischen Teebl\u00e4tter werden direkt nach der Ernte hohen Temperaturen ausgesetzt, um Oxidationsprozesse zu unterbinden. Die bis zu 400\u00b0C hohen Temperaturen werden durch ein Holzfeuer erzeugt. Hier erh\u00e4lt Mate auch sein charakteristisches Aroma. Im Anschluss erfolgen weitere Trocknungsprozesse bis der Mate nur noch einen geringen definierten Feuchtigkeitsgehalt aufweist. Im Anschluss wird der Tee f\u00fcr zwei Jahre gelagert, um zu reifen. In der Matebar des Produktionsbetriebs konnten wir die verschiedenen Mateblends testen. Beeindruckt hat uns der lange Reifungsprozess, der notwendig ist, um einen guten Matetee zu erzeugen.<\/p>\n<\/div><\/div>\n\n<div class=\"block-wrapper block-wrapper--paragraph\"><div class=\"container container--narrow\">\n<p>Die n\u00e4chste Besichtigung erfolgte bei einem landwirtschaftlichen Betrieb, der Sojabohnen anbaut. Der Betrieb geh\u00f6rt zu einer Kooperative, die Soja im Wechsel mit Mais und Weizen, aber auch Hafer kultiviert. Die Besonderheit in dieser Region ist, dass pro Jahr zwei Ernten erfolgen, die Haupternte (Zafra) und die sogenannte kleine Ernte (Zafri\u00f1a). Die Kooperative verkauft das Soja nach der Ernte an eine Sojam\u00fchle, die daraus Soja\u00f6l und -extraktionsschrot herstellt. Sojaschrot wird insbesondere in der Tierhaltung als Proteinkomponente genutzt.<\/p>\n<\/div><\/div>\n\n<div class=\"block-wrapper block-wrapper--paragraph\"><div class=\"container container--narrow\">\n<p>Des Weiteren haben wir einen Biobetrieb besucht der Rohrzucker herstellt. Die Kooperative erzeugt verschiedene Zuckerqualit\u00e4ten f\u00fcr den Weltmarkt und ist zus\u00e4tzlich zur Biozertifizierung auch Fair Trade zertifiziert. Der Anbau des Zuckerrohrs erfolgt in Handarbeit, die Pflanzen werden gesetzt und f\u00fcr rund vier Jahre einmal j\u00e4hrlich geerntet. Das Schneiden des Zuckerrohrs erfolgt von Hand, der Transport zur Zuckerraffinerie per Ochsenkarren und zum Teil per Traktor. In der Raffinerie erfolgt dann das Aufschlie\u00dfen des Zuckerrohrs, das Herausl\u00f6sen des Zuckers und die Kristallisation zu Zuckerkristallen. Die Kooperative f\u00fchrt ihre Prozesse weitestm\u00f6glich im Kreislauf: Der Wasserdampf wird durch Verbrennen der anfallenden Bagasse erzeugt. Mit dem hei\u00dfen Dampf wird zun\u00e4chst die ben\u00f6tigte elektrische Energie erzeugt. Im Anschluss wird der Dampf zum Herausl\u00f6sen und Aufkonzentrieren der Zuckerl\u00f6sung genutzt. Der abgek\u00fchlte Wasserdampf wird kondensiert und in den Kreislauf zur\u00fcckgef\u00fchrt. Aus weiteren Reststoffen aus der Zuckerproduktion sowie aus einem Teil der Bagasse werden organische D\u00fcngemittel hergestellt, die dann im Anbau des Zuckerrohrs wieder eingesetzt werden.<\/p>\n<\/div><\/div>\n\n<div class=\"block-wrapper block-wrapper--paragraph\"><div class=\"container container--narrow\">\n<p>Wir freuen uns auf die weitere Zusammenarbeit mit den Produzent:innen bei der Arbeit an den Fallstudien und sind gespannt auf die Ergebnisse.
